These Biscoff Cheesecake Cups are a simple no-bake dessert made with layers of crushed biscuits, creamy cheesecake filling, and melted Biscoff spread. They are quick to prepare and set in the refrigerator, making them suitable for gatherings or an easy homemade treat.

The combination of smooth cream cheese and caramel-flavored biscuits creates a balanced texture with both creaminess and crunch.


Ingredients

Base:

  • 100 g Lotus biscuits, crushed
  • 2 tablespoons melted butter

Cheesecake Layer:

  • 150 g softened cream cheese
  • 2 tablespoons icing sugar
  • 100 ml double cream
  • 2 tablespoons Biscoff spread

Topping:

  • 1 tablespoon melted Biscoff spread
  • 100 ml whipping cream
  • 1 tablespoon icing sugar
  • 2 Lotus biscuits for decoration

Instructions

1. Prepare the Base

Crush the Lotus biscuits into fine crumbs using a food processor or by placing them in a sealed bag and crushing with a rolling pin. Mix the crumbs with melted butter until evenly combined.

Divide the mixture between small serving cups or jars and press down firmly to form a compact base. Refrigerate while preparing the filling.

2. Make the Cheesecake Layer

In a bowl, beat the cream cheese with icing sugar until smooth. In a separate bowl, whip the double cream until soft peaks form. Fold the whipped cream gently into the cream cheese mixture. Add the Biscoff spread and mix until smooth and evenly combined.

3. Assemble

Spoon or pipe the cheesecake mixture over the chilled biscuit base. Smooth the surface. Refrigerate for at least 2 to 3 hours, or overnight, until firm.

4. Prepare the Topping

Whip the cream with icing sugar until thick and stable. Pipe or spoon the whipped cream on top of the set cheesecake layer.

Drizzle melted Biscoff spread over the cream and decorate with whole or crushed Lotus biscuits.

Serve chilled.
