Cauliflower Bake with Creamy Dill Garlic Sauce

This cauliflower bake is the kind of dish that feels comforting the moment it comes out of the oven. The cauliflower turns tender and almost buttery on the inside, while the outside develops a lightly crisp, cheesy crust that adds texture and depth. Paired with a cool, creamy dill and garlic sauce, the flavors stay balanced and fresh. It works equally well as a main vegetarian dish or as a satisfying side.

Ingredients

For the bake

  • 1 medium cauliflower, cut into florets
  • 2 eggs
  • Salt, to taste
  • Black pepper, to taste
  • Paprika, a pinch
  • 1 teaspoon Italian herbs
  • 100 g breadcrumbs
  • 80 g grated cheese, cheddar or mozzarella
  • A handful of fresh parsley, chopped
  • Panko breadcrumbs, for topping
  • A drizzle of oil

For the dill garlic sauce

  • 2 tablespoons Greek yogurt
  • 2 tablespoons mayonnaise
  • 1 garlic clove, minced
  • Fresh dill, finely chopped
  • Salt and black pepper, to taste

Instructions

Prepare the cauliflower

Bring a pot of salted water to a boil. Add the cauliflower florets and blanch for 4 to 5 minutes until just tender but still holding their shape. Drain well and let cool slightly.

Make the coating

In a large bowl, whisk the eggs with salt, pepper, paprika, and Italian herbs. Stir in the chopped parsley.

Coat the cauliflower

Add the blanched cauliflower to the egg mixture and gently toss until evenly coated. Sprinkle in the breadcrumbs and grated cheese, mixing lightly so the coating sticks to the florets.

Assemble the bake

Transfer the coated cauliflower to a lightly oiled baking dish and spread it evenly. Sprinkle panko breadcrumbs over the top and drizzle lightly with oil.

Bake

Bake in a preheated oven at 180°C for about 40 minutes, until the top is golden and crisp.

Prepare the sauce

While the cauliflower bakes, mix Greek yogurt, mayonnaise, minced garlic, chopped dill, salt, and pepper in a small bowl. Stir until smooth and refrigerate until serving.

Serve

Let the bake rest for a few minutes after removing it from the oven. Serve warm with the creamy dill garlic sauce drizzled on top or on the side.

Why This Recipe Works

The eggs bind the cauliflower and breadcrumbs without making the dish heavy, while the cheese adds richness and flavor. Baking instead of frying keeps it lighter, and the cool yogurt-based sauce cuts through the savory crust, keeping every bite balanced.

Storage Tips

Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in the oven at 170°C to restore the crispy texture. The sauce is best stored separately and added just before serving.

Variations to Try

  • Add chili flakes for a subtle kick
  • Swap parsley for fresh thyme or oregano
  • Use smoked cheese for deeper flavor
  • Replace mayonnaise with extra yogurt for a lighter sauce

Nutritional Notes

Cauliflower is rich in fiber and vitamin C while staying low in calories. Combined with eggs and cheese, this dish offers a good balance of protein, healthy fats, and vegetables, making it satisfying without feeling heavy.

This cauliflower bake proves that simple ingredients can turn into a dish that feels comforting, fresh, and complete, perfect for everyday cooking or sharing at the table.
