Ingredients

For the meatballs

  • 500 g ground beef
  • 1 large egg
  • Salt, to taste
  • Ground black pepper, to taste
  • 1 teaspoon French seasoning
  • 1 teaspoon tomato flakes or 1 tablespoon tomato paste
  • 3 tablespoons breadcrumbs
  • 2 tablespoons fresh parsley, finely chopped
  • 2 cloves garlic, minced
  • 4 strips bacon, finely chopped

For the mushroom and spinach layer

  • 1 medium onion, finely diced
  • 150 g fresh mushrooms, sliced
  • 1 tablespoon olive oil
  • Salt and black pepper, to taste
  • 2 tablespoons sour cream
  • 1 tablespoon fresh dill, finely chopped
  • 1 handful spinach leaves, roughly chopped

For the roasted vegetables

  • 1 cup broccoli florets
  • 1 cup green beans, trimmed
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 tablespoon olive oil
  • Salt and black pepper, to taste
  • ½ teaspoon curry powder
  • ½ teaspoon Italian seasoning

For the topping

  • 1 cup shredded cheese, mozzarella, cheddar, or a mix

Instructions

Prepare the meatballs

In a large bowl, combine ground beef, egg, salt, pepper, French seasoning, tomato flakes, breadcrumbs, parsley, garlic, and bacon. Mix gently until just combined. Shape into medium-sized meatballs.

Place the meatballs on a lined baking tray and bake at 180°C for 25 to 30 minutes, until lightly browned.

Make the mushroom and spinach layer

Heat olive oil in a pan over medium heat. Add onion and cook until soft. Add mushrooms and cook until their moisture evaporates and they begin to brown. Season lightly with salt and pepper.

Stir in sour cream, dill, and spinach. Cook for 1 to 2 minutes, just until the spinach wilts. Remove from heat.

Roast the vegetables

Toss broccoli, green beans, and bell peppers with olive oil, curry powder, Italian seasoning, salt, and pepper. Spread on a baking tray and roast at 180°C for 20 to 25 minutes, until tender and lightly caramelized.

Assemble the bake

Place the baked meatballs in a large casserole dish. Spoon the mushroom and spinach mixture over them, then add the roasted vegetables evenly around and between the meatballs.

Sprinkle shredded cheese generously over the top.

Final bake

Return the dish to the oven and bake for 10 to 15 minutes, until the cheese is fully melted and lightly golden.

Let rest for a few minutes before serving.

Why This Recipe Works

The meatballs stay juicy thanks to the egg, breadcrumbs, and bacon, while the mushroom and spinach layer adds creaminess and depth. Roasted vegetables bring sweetness and balance, keeping the dish from feeling too rich. Melted cheese ties everything together into one cohesive, comforting bake.

Serving and Storage Tips

Serve hot with rice, mashed potatoes, or crusty bread. Leftovers keep well in the refrigerator for up to three days and reheat best in the oven to maintain texture.

This cheesy meatballs bake is a reliable, satisfying dish that feels generous, cozy, and full of flavor, perfect for any day you want something warm and comforting without extra effort.
