Flaky Homemade Puff Pastry Apple Turnovers

These homemade apple turnovers are made with buttery, flaky puff pastry and a soft cinnamon apple filling. The pastry is prepared from scratch using simple ingredients, then folded around a sweet fruit filling and baked until golden and crisp.

Ingredients

For the Puff Pastry:

  • 2 cups (250 g) all-purpose flour
  • 1 cup (230 g) unsalted butter, chilled and cubed
  • ½ cup (120 ml) cold water

For the Apple Filling:

  • 3 medium apples, peeled and diced
  • 3 tablespoons sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch

For Assembly:

  • 1 egg, beaten (for egg wash)
  • 1 tablespoon sugar, for sprinkling (optional)

Instructions

1. Prepare the Puff Pastry Dough

In a large bowl, place the flour. Add the chilled, cubed butter and rub it into the flour using your fingertips until the mixture resembles coarse crumbs with visible butter pieces.

Gradually add the cold water and mix just until the dough comes together. Do not overwork it. Form into a rough rectangle, wrap in plastic wrap, and refrigerate for 30 minutes.

After chilling, roll the dough into a rectangle on a lightly floured surface. Fold it into thirds like a letter. Rotate 90 degrees, roll out again, and fold. Repeat this rolling and folding process 3 to 4 times to create layers. Chill again for 30 minutes before using.

2. Prepare the Apple Filling

In a bowl, combine the diced apples, sugar, cinnamon, lemon juice, and cornstarch. Mix well and set aside. The cornstarch helps thicken the filling as it bakes.

3. Shape the Turnovers

Preheat the oven to 190°C (375°F). Line a baking tray with parchment paper.

Roll out the chilled pastry to about 3 mm thickness. Cut into equal squares, about 10 to 12 cm wide.

Place a spoonful of apple filling in the center of each square. Fold diagonally to form triangles. Press the edges with a fork to seal. Make a small slit on top of each turnover to allow steam to escape.

4. Bake

Brush each turnover with beaten egg and sprinkle lightly with sugar if desired.

Bake for 20 to 25 minutes, or until puffed and golden brown.

5. Cool and Serve

Let the turnovers cool slightly before serving. They can be enjoyed warm or at room temperature.


Storage Tips

Store in an airtight container at room temperature for up to 2 days or refrigerate for up to 4 days. Reheat in the oven at 170°C (340°F) for a few minutes to restore crispness.
