This Fluffy Marble Cake combines a soft vanilla batter with cocoa swirls, finished with Lotus Biscoff cream and chopped peanuts on top. It is simple to prepare and suitable for coffee breaks, desserts, or casual gatherings. The yogurt in the batter keeps the cake moist, while the cocoa creates a classic marbled look.


Ingredients

  • 2 eggs
  • A pinch of salt
  • A few drops of vanilla extract
  • 130 g sugar
  • 5 tablespoons oil
  • 5 tablespoons yogurt
  • 250 g flour
  • 10 g baking powder
  • Cocoa powder, for marbling
  • Lotus Biscoff cream, for topping
  • Chopped peanuts, for garnish
  • Butter, for greasing the pan

Instructions

1. Prepare the Pan

Preheat the oven to 175°C (350°F). Grease a 22 × 12 cm baking dish with butter. You may line the base with parchment paper if preferred.

2. Mix the Wet Ingredients

In a bowl, beat the eggs with salt and vanilla. Add the sugar and whisk until pale and slightly thickened. Stir in the oil and yogurt until smooth.

3. Add Dry Ingredients

Sift together the flour and baking powder. Gradually mix them into the wet ingredients, stirring gently until a smooth batter forms. Avoid overmixing.

4. Create the Marble Batter

Divide the batter into two equal parts. Mix about 1½ tablespoons of cocoa powder into one portion. Leave the other portion plain.

Spoon alternating layers of vanilla and cocoa batter into the prepared pan. Use a knife or skewer to swirl lightly and create a marble pattern.

5. Bake

Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.

6. Add Topping

Spread Lotus Biscoff cream over the cooled cake. Sprinkle chopped peanuts on top.
