Garlic-Infused Hasselback Potatoes

Garlic-infused Hasselback potatoes are the kind of side dish that looks impressive while staying refreshingly simple. Thinly sliced but still connected at the base, each potato opens up in the oven, creating crisp edges and a soft, fluffy interior. As they bake, melted butter, olive oil, and garlic seep between the slices, flavoring every layer from the inside out.

They are perfect alongside roasted meats, grilled fish, or even as a centerpiece for a vegetarian meal. Crispy, aromatic, and deeply comforting, these potatoes manage to feel both rustic and refined.

Ingredients

  • 6 medium Yukon Gold or Russet potatoes
  • 4 tablespoons unsalted butter, melted
  • 2 tablespoons olive oil
  • 4 cloves garlic, finely minced
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 1 teaspoon fresh thyme leaves or ½ teaspoon dried thyme
  • 1 tablespoon fresh parsley, chopped
  • ¼ cup grated Parmesan cheese, optional

Instructions

Prepare the oven and potatoes

Preheat the oven to 220°C. Line a baking tray with parchment paper or lightly grease it.

Wash and scrub the potatoes well, leaving the skin on. Place each potato between two wooden spoons or chopsticks to avoid slicing all the way through. Cut thin slices along the length of each potato, stopping just before the base.

Make the garlic butter

In a small bowl, combine melted butter, olive oil, minced garlic, salt, pepper, and thyme. Let it sit for a few minutes so the garlic infuses the fat.

Bake the potatoes

Arrange the sliced potatoes on the prepared tray. Brush them generously with the garlic butter mixture, making sure it gets between the slices.

Bake for 40 minutes, brushing once more halfway through to encourage even browning and crisp edges.

Add cheese and finish baking

If using Parmesan, sprinkle it over the potatoes after 40 minutes. Return them to the oven and bake for another 10 to 15 minutes, until the edges are deeply golden and the centers are tender.

Serve

Remove from the oven, sprinkle with fresh parsley, and serve hot while crisp.

Why This Recipe Works

The Hasselback slicing technique increases surface area, which means more crispness and more flavor. Butter brings richness, olive oil helps with browning, and garlic infuses the potatoes gently as it roasts. The result is a contrast of textures that makes these potatoes far more interesting than a standard roast.

Serving and Storage Tips

Serve immediately for maximum crispness. Leftovers can be stored in the refrigerator for up to three days and reheated in the oven at 190°C until hot and crisp again. Avoid microwaving if possible, as it softens the edges.

Garlic-infused Hasselback potatoes prove that a few basic ingredients and a smart technique can transform an everyday vegetable into something memorable. Crisp on the outside, tender inside, and rich with garlic and herbs, they are a side dish that always earns its place on the table.
