Refreshing Cabbage and Apple Salad with Honey Mustard Yogurt Dressing

This cabbage and apple salad is a crisp, quick side dish made with shredded cabbage, carrots, cucumber, and fresh apple, all coated in a light honey mustard yogurt dressing. It requires no cooking and can be prepared in about 15 minutes. The result is a balanced mix of crunchy, sweet, and tangy flavors.

Ingredients

  • 1 head of cabbage
  • Salt, to taste
  • 2 carrots
  • 1 cucumber
  • 1 apple
  • 75 g yogurt
  • 2 tablespoons mustard
  • 1 tablespoon honey
  • Lemon juice, to taste
  • 2 tablespoons olive oil

Instructions

1. Prepare the Vegetables and Fruit

Wash the cabbage, remove any outer leaves, and cut it in half. Remove the core and shred it finely using a knife or mandolin. Peel and grate the carrots. Slice the cucumber into thin rounds or half-moons. Core the apple and cut it into thin slices. You may leave the peel on if preferred.

2. Prepare the Dressing

In a small bowl, whisk together yogurt, mustard, honey, olive oil, and lemon juice. Add salt to taste and adjust sweetness or acidity if needed.

3. Combine

Place the shredded cabbage, carrots, cucumber, and apple in a large bowl. Pour the dressing over the vegetables and toss until evenly coated.

4. Serve

Serve immediately or refrigerate for 15 to 20 minutes before serving to allow the flavors to blend.
