- 1 egg
- 5 to 6 g salt
- 50 g softened butter
Savory Filling:
- 100 g chopped walnuts
- 100 to 150 g chopped sun-dried tomatoes
- 100 to 150 g sliced olives
- 100 to 150 g chopped spinach
- 1 to 2 tablespoons balsamic vinegar
- Salt to taste
- 150 g crumbled goat cheese
Instructions
1. Activate the Yeast
Combine warm milk, warm water, and sugar in a bowl. Add the fresh yeast and let it sit for about 10 minutes until foamy.
2. Prepare the Dough
In a large bowl, mix flour and salt. Add the yeast mixture, eggs, and oil for the sweet version, or butter for the savory version. Mix until combined, then knead for 10 to 12 minutes until the dough becomes smooth and elastic. It should be soft but not sticky.
3. First Rise
Place the dough in a lightly greased bowl, cover, and let it rise in a warm place for 50 to 60 minutes, or until doubled in size.
4. Prepare the Fillings
For the sweet filling, mix cottage cheese, brown sugar, and vanilla sugar until smooth.
For the savory filling, sauté the spinach briefly until wilted. Combine it with sun-dried tomatoes, olives, walnuts, goat cheese, balsamic vinegar, and a pinch of salt.
5. Shape the Rolls
After rising, punch down the dough. If making both versions, divide it in half. Roll each portion into a rectangle about ½ inch thick. Spread the chosen filling evenly across the surface. Roll tightly from one side and slice into equal portions.
Place the rolls on a lined baking tray, leaving space between them.
6. Second Rise
Cover and let them rest for 20 to 30 minutes until slightly puffed.
7. Bake
Brush the tops with a mixture of 1 egg and 1 tablespoon milk. Bake at 180°C (356°F) for 30 to 35 minutes until golden brown.
8. Serve
Allow the rolls to cool slightly before serving. Sweet rolls can be dusted with powdered sugar or drizzled with honey. Savory rolls pair well with soup or salad.
