
This Savory Potato-Vegetable Casserole is a baked dish made with grated potatoes, carrots, bell peppers, and eggplant combined in a simple egg and milk batter. Once baked, it becomes firm inside with a lightly golden top. It can be served as a vegetarian main course or as a side dish.
Ingredients
- 4 medium potatoes, peeled and grated
- 1 medium onion, finely chopped
- 1 large carrot, grated
- 200 g bell peppers, chopped
- 1 medium eggplant, chopped
- 3 large eggs
- 250 ml milk
- 200 g flour
- 2 tablespoons vegetable oil, plus extra for greasing
- 1 teaspoon salt
- ½ teaspoon ground black pepper
- ½ teaspoon sweet paprika
- ½ teaspoon dried herbs
- Optional: 100 g shredded cheese
- Optional: 1 tablespoon butter for greasing
Instructions
1. Prepare the Vegetables
Peel and grate the potatoes and carrots. Chop the onion, bell peppers, and eggplant into small, even pieces.
2. Remove Excess Moisture
After grating the potatoes, squeeze out excess liquid using a clean towel or paper towel. This helps prevent a watery texture during baking.
3. Preheat the Oven
Preheat the oven to 180°C (360°F). Grease a baking dish with vegetable oil or butter.
4. Make the Batter
In a large bowl, whisk the eggs and milk together. Gradually add the flour while stirring to avoid lumps. Season with salt, pepper, paprika, and dried herbs. The mixture should be thick but pourable.
5. Combine
Add all the prepared vegetables into the batter and mix until evenly coated. If using cheese inside the mixture, add half at this stage.
6. Transfer to Dish
Pour the mixture into the prepared baking dish and spread evenly. Sprinkle the remaining cheese on top if desired.
7. Bake
Bake for 40 to 45 minutes, until the top is golden and the center feels set. If it browns too quickly, cover loosely with foil during baking.
8. Rest and Serve
Let the casserole rest for about 10 minutes before slicing. Serve warm.
