Apples have a natural sweetness and gentle tartness that make them perfect for baking. This classic apple cake is soft, moist, and lightly sweet, making it ideal for afternoon tea, dessert, or a simple homemade treat. Ingredients

  • 2 large apples
  • A splash of lemon juice
  • 1 tablespoon cane sugar
  • 2 large eggs
  • 70 g granulated sugar
  • 100 ml milk
  • 2 tablespoons sunflower oil
  • 170 g all-purpose flour
  • 10 g baking powder
  • Butter or oil, for greasing the pan

Instructions

1. Prepare the Apples

Peel and core the apples, then cut them into thin slices. Place them in a bowl, drizzle with lemon juice, and toss with the cane sugar. Set aside.

2. Mix the Eggs and Sugar

In a large bowl, beat the eggs with the granulated sugar for 2 to 3 minutes until the mixture becomes pale and slightly thick. This helps give the cake a lighter texture.

3. Add the Liquids

Stir in the milk and sunflower oil. Mix until smooth and fully combined.

4. Add the Dry Ingredients

Sift the flour and baking powder into the bowl. Fold gently until just incorporated. Avoid overmixing so the cake stays soft.

5. Assemble the Cake

Grease a 20 cm round baking pan and line the bottom with parchment paper.

Pour half of the batter into the pan. Arrange half of the apple slices over the batter. Add the remaining batter on top, then finish with the rest of the apples arranged neatly on the surface.

6. Bake

Preheat the oven to 180°C (350°F). Bake for 45 to 50 minutes, or until a skewer inserted into the center comes out clean.

Let the cake cool in the pan for about 10 minutes before transferring it to a wire rack. Dust with powdered sugar if desired.
