
Creamy Chicken with Mushrooms and Herbed Mashed Potatoes
This creamy chicken with mushrooms served alongside herbed mashed potatoes is a simple, comforting meal that feels special without requiring complicated steps. Tender chicken is simmered in a garlic-Parmesan cream sauce with mushrooms, then paired with soft mashed potatoes flavored with onion and fresh dill. It works well for a family dinner or a relaxed weekend meal.
Ingredients
For the Chicken and Mushroom Sauce
- 2 chicken fillets (about 400 g)
- 2 cloves garlic, minced
- 50 g grated Parmesan cheese
- 200 g mushrooms, sliced
- 250 ml heavy cream
- Salt, to taste
- Black pepper, to taste
- Fresh parsley, chopped
- Olive oil or butter, for cooking
For the Herbed Mashed Potatoes
- 400 g potatoes, peeled and chopped
- 100 ml milk
- 1 onion, finely chopped
- 15 g butter
- 1 teaspoon salt
- Black pepper, to taste
- Fresh dill, chopped
Instructions
1. Cook the Chicken
Pat the chicken dry and season both sides with salt and black pepper.
Heat a little oil or butter in a large skillet over medium-high heat. Cook the chicken for about 4 to 5 minutes per side, until golden and cooked through. Remove from the pan and set aside.
2. Prepare the Mushroom Sauce
In the same pan, add a small amount of butter if needed. Add the sliced mushrooms and cook for about 5 minutes until they soften and begin to brown.
Stir in the minced garlic and cook for about 30 seconds.
Pour in the cream and let it simmer gently for a few minutes until slightly thickened. Add the grated Parmesan and stir until melted. Adjust seasoning with salt and pepper.
Return the chicken to the pan and let it simmer in the sauce for 3 to 4 minutes. Sprinkle with chopped parsley before serving.
3. Make the Mashed Potatoes
Boil the potatoes in salted water for about 15 minutes, or until very soft. Drain well.
In a small pan, melt the butter and sauté the chopped onion until soft.
Mash the potatoes, then add the milk, cooked onion, salt, and pepper. Mix until smooth and creamy. Stir in chopped dill at the end.
4. Serve
Place mashed potatoes on a plate and top with chicken and mushroom sauce. Spoon extra sauce over everything and serve warm.

Storage
